Calamari Rings Recipe - Squid stew Ingredients: 2 lb squid rings 2 clv garlic 1 onion 1 tomato (ripe, medium) 3 T olive oil 1/4 t salt 6 saffron threads 1/4 t salt 1 c white wine 1/2 t spanish sweet paprika (optional) Instructions: 1. Thaw calamari rings if necessary and wash with water. 2. Peel and chop cloves of garlic. 3. Peel and chop onion. 4. Wash and grate tomato. 5. Place 3 tablespoons of olive oil in a pot and heat. When warm add cloves of garlic, onion and 1/4 teaspoon of salt. Cook over low heat for 8 - 10 minutes. 6. Add grated tomato and cook over low heat for 4 - 5 minutes. 7. Add squid rings and cook and stir over medium heat for 2 - 3 minutes. 8. Place 1/4 teaspoon of salt and saffron threads in a mortar. Use a pestle to grind. 9. Add a cup of white wine to the mortar to dissolve the saffron and salt mixture. 10. Add the dissolution to the pot (optionally you can add 1/2 teaspoon of Spanish sweet paprika). 11.
